Dragon chicken is a popular indo-chinese appetizer. This dish is most famous in vietnam. It is one of the easiest indo-chinese chicken dishes. It tastes irresistibly good and looks very appetizing because of its vibrant colour. This goes extremely well with fried rice or noodles . In this recipe we are using chicken that are cut into thin strips, coated in a batter, fried till it gets crispy texture and finally sauces gives an extra- touch up to the dish and make them even more tastier.

| INGREDIENTSFOR MARINATION Boneless chicken(Thin strips) – 300 Gms Soy sauce – 2 Tsp Egg – 1 No Corn flour – 3 Tsp Pepper – 1/2 Tsp Salt – 1/2 Tsp FOR SAUCE Oil – 2 Tbsp Cashew nuts (broken) – 1/4 Cup Chopped ginger – 1 Tsp Chopped garlic – 1 Tsp Chilli flakes – 2 Tsp Salt – 1/2 Tsp Spring onion whites – 1/2 Cup Capsicum (julienne) – 1/2 No Soy sauce – 2 Tsp Chilli sauce or Chilli paste – 4 Tsp Tomato Ketchup – 3 Tbsp Sugar – 1 Tsp Corn flour – 2 Tsp Water – 1/2 Cup Salt – 1 Tsp Spring onion greens – Chopped

TIPS TO GET flawless dragon chicken1. I highly recommend using boneless, skinless thighs of a chicken as they can withstand cooking temperature without drying out. Alternatively you can also use breast part of chicken but cut them slightly thicker. 2. Don't skip corn flour they are the ones which gives us the crispy coating. 3. Marinate them as long as you can. The longer it marinates, the better it tastes. 4. Don't overcrowd the pan. Fry the chicken strips in batches. 5. Don't over fry the chicken pieces, then you might end up with chewy or rubbery chicken. 6. Chopped ginger and garlic adds up nice flavour along with crunchy cashew nuts. 7. You can adjust the sauces and spices as per your taste buds.

INSTRUCTIONS 1. In a bowl add boneless chicken strips , egg, soya sauce, salt, freshly crushed pepper and cornflour. 2. Mix everything together and let it marinate for 45 mins to 1 hour. 3. Deep fry the marinated chicken in oil on medium flame till it turns golden brown. keep the fried chicken strips aside. 4. In a wok add oil and broken cashews roast them to golden brown colour. 5. Add chopped ginger and garlic, chilli flakes, onions and capsicums. Saute them well. 6. Add soya sauce, chilli sauce, tomato ketchup, sugar and salt(as much needed). 7. Add some water and dissolved cornflour slurry, bring it to boil. Little more water can also be added to get the consistency. check for seasoning. 8. Add the fried chicken strips and mix them well. Let the chicken cook in sauce for about 5 minutes on medium - low flame. 9. Finally garnish with handful of chopped spring onion stalk. 10. Spicy Dragon Chicken is ready to serve with Hot fried rice. |
