TEMPERED WHITE RICE FOR FISH CURRY

Tempered white rice is a simple recipe. It suits well with fish curry. If you are bored of eating plain white rice definitely you can try this out. This recipe is a perfect blend of spices, herb and coconut milk. Zeeraga samba rice is the most important appetizing ingredient in this recipe. Have this with fresly prepared fish curry and fried fishes. 

 

 

 

 

 

  

INGREDIENTS

Oil – 2 Tbsp

Ghee – 2 Tbsp

Cinnamon – 1 No

Cardomom – 2 No

Cloves  2 No

Bay leaf – 1 No

Onion(Thinly sliced) – 1 No

Ginger garlic paste – 2 Tbsp

Curd  2 Tsp

Mint leaves – Few

Zeeraga Samba Rice – 800 grams

Coconut milk(Thick) – 500 ml 

Water – 1500 ml

Lemon Juice – (1/2) No

Rock Salt – As per taste




 





 

 

TIPS TO GET THE RICE PERFECT 

1. I prefer using double deer zeera samba rice. It gives a nice aroma and flavour. 

2. Don't rinse the zeeraga samba rice more than twice before cooking.

3. Lemon juice is added to give softness to the rice.

4. Coconut milk and water should be in 1:3 ratio.

5. Each electric rice cooker has different settings, You can adjust the mode and timings accordingly.

6. Use fresh Mint leaves to get the luscious rice.

7. The recipe quantity can be adjusted according to the family.

 

 

                                                                                   

 

         

               INSTRUCTIONS

1. In a rice cooker add oil and ghee. Add all the spices (cinnamon, cardamom, cloves and bay leaf) let it fry for a minute.

2. Add in onions and saute until they turn translucent . 

3. Add ginger garlic paste saute until you get rid of raw smell then add mint leaves and curd. 

4.  Add in water and coconut milk stir them both, once it starts boiling add rock salt as much as needed and then the rinsed rice.

5.  Add some lemon juice to the rice give it a stir and close the lid.

6.  Cook the rice for 20-25 minutes. When the rice is cooked it gets switched to warm mode. You can switch off the rice cooker at this point.

7.  You can follow the same procedure if using pressure cooker, Leave for 1 whistle on high flame and 3 mins on medium flame.

8.  Tada!!!Enjoy the rice with fish curry.
