Sambar is a south indian traditional dish made with lentils, mixed vegetables, herbs and a special aromatic homemade sambar powder. It is healthy as well as nutritious rich in protein, vitamins and minerals. The unique flavour of sambar comes from the aromatic homemade sambar powder. Mostly toor dal is used as sambar dal but some people also use combination of toor, moong, masoor or even other dals. We can make different versions of sambar suiting of the main dish which we have with it. This is a simple recipe that can be customized as per one's taste. Try this recipe for a delicious meal. |

Ingredients
Dal mixture: Toor dhal(Rinsed) – 200 gms Turmeric – 1/4tsp Water – 1.5 cup Garlic – 2 No’s VEGETABLES STEW: Onion – 1 (Thin Slices) Tomato – 2 (Thin Slices) Carrot – 1 (Round slices) Brinjal – 3 (lengthwise slices) Drumstick – 1 Homemade sambar powder – 3 tbsp Salt – As per taste Few curry leaves TEMPERING: Ghee
– 1 tsp Oil – 2 tsp Mustard – 1 tsp Cumin seeds – 1 tsp Red chilli – 2 No’s Hing – a pinch Onion – ½ (chopped) Curry leaves – Few Coriander – Few |

TIPS TO GET THE SAMBAR PERFECT1. We can use vegetables of our choices like brinjal, drumstick, carrot, okra, bottle gourd. Each veggies alter the taste of the dish. So use veggies that suits your taste buds. 2. Soft cook all the vegetables to get a nice flavour
for the sambar. 3. Ghee is one of the important ingredient, as it makes
the dish an appetizing food. 4. Coriander leaves is much needed to flavour the sambar. 5. Fresh curry leaves are used to temper the sambar
as it gives a unique aroma. 6. Usually sambar is made thick but of pouring consistency. If needed we can add hot water to the sambar to maintain its consistency.

INSTRUCTIONS1. In a pressure
cooker add toor dhal , turmeric, crushed garlic and water. 2. Pressure cook
for 4-5 whistle or until the dal is cooked well, release the pressure and
mash the dal smoothly with whisk. Keep the dal mixture aside. 3. In the same
pressure cooker add onion, tomatoes, carrot, brinjal, drumstick, homemade
sambar powder, salt and curry leaves mix them all well and pressure cook for
1 whistle. 4. Once the
pressure releases, open the cooker and make sure the vegetables are cooked
completely. 5. Add the dal
mixture to the vegetable stew and give them a good mix. Check for seasoning. 6. For tempering
add oil, mustard, cumin seeds, red chilli, hing, curry leaves and finally
onions. Splutter the tempering. 7. Let the
sambar boil for 3 mins, add ghee to the boiling sambar, off the stove and pour
the tempering over the sambar finally garnish with coriander leaves. 8.
Enjoy the simple veg sambar with Hot steamed rice. |
