Rava milk halwa is a traditional Indian dessert. This tastes almost like our Tirunelveli famous iruttukadai halwa. This halwa is a perfect blend of rava milk, sugar, ghee and nuts. Most of the people use to make rava halwa but this recipe is totally different from them. You'll love it once you prepare . Try this recipe for a delicious dessert.

TIPS TO GET THE SILKY HALWA1. Use muslin or cotton cloth in a strainer to get nice and thick milk. 2. To get the rava milk add water little by little accordingly . It has no specific water quantity. 3. Caramelized sugar adds nice flavour and color to the halwa. Carefully caramelize the sugar it should not turn dark brown or get burnt. 4. Sugar solution must be in a thread like or one string consistency. 5. Salt enhances the sweetness of the halwa. 6. Broken cashew nuts make this dessert more appealing. 7. This recipe needs just 1/4 to 1/2 cup ghee to get the silky halwa consistency.

INSTRUCTIONS1. Soak 1 cup rava in water for 3 hours. 2. Squeeze the soaked rava using hands to get the rava milk. 3. Place a muslin cloth in a strainer and pass the rava milk through it to another bowl. 4. We should squeeze and strain the rava milk for 3 times. This gives us 3 cups of rava milk. 5. Mix the rava milk well so that the rava at the bottom of the bowl are mixed evenly again. 6. In a non-stick kadai add 1.5 cups of sugar take 2 Tbsp from it and keep it aside to caramelize. 7. For caramelization add 2 Tbsp of sugar in a tadka pan and keep it on the stove at low heat until sugar turns light brown. 8. Add 1/4 cup of water to the sugar in kadai and let it boil till we get the sticky sugar solution. At this point add the milk and mix well. 9. Gel like consistency is obtained after sometime. Now add the caramelized sugar to the kadai and mix well. 10. Add a pinch of salt and broken cashew nuts. Keep on stirring. 11. Add 1/4 – 1/2cup of ghee little by little. Continue to stir and mix well until the halwa seperates from the kadai. It should not stick on the sides. 12. When you get the silky halwa consistency, switch off the heat. It can be served hot or warm. Enjoy the yummy dessert with friends and family. |
