No matter the age, we can never say no to cakes! Be a little kid or an elderly person, cakes tempt everyone. Here is my version of healthy and gluten free Rice flour cake. Rice flour is high in fibre and low in saturated fat. There won't be much difference between rice flour cake and our regular gluten sponge cake. I made this with simple ingredients available at our home. It has no baking soda or baking powder. Especially if you are an egg lover this recipe gonna be a treat for your taste buds. The texture of the cake is cottony soft and fluffy. Do try this out.

TIPS TO GET THE FLAWLESS RICE FLOUR CAKE1. I recommend using egg yolk seperator to seperate egg yolk and whites. 2. Lemon juice is used to get rid of the eggy smell in cakes. 3. Vanilla essence can help cover up an overwhelming egg taste or smell. It also adds another touch of flavor to our cakes. 4. Sift the rice flour previously to avoid lumps in the batter. 5. Use hand mixer to whip egg whites this helps us to achieve stiff peaks soon. 6. Fold the batter in single direction using spatula. 7. Temperature and time is different for each oven or otg, so set the baking options according to your cake baking setting. 6. check to see if your cake is cooked by inserting a dry toothpick in the centre. If it comes out wet, cook further. But if it comes out clean, you can take the cake out of the oven.

INSTRUCTIONS1. Line the cake tin with parchment paper. 2. In a bowl add egg yolks start whipping them using wire whisk. 3. Add in salt, milk, half lemon juice, vanilla essence and refined oil continue whipping until you see shiny bubbles. 4. Add the previously sifted rice flour to the yolk mixture. Stir the mixture well with whisk until it turns smooth. The mixture should not have any lumps. Keep the bowl aside. 5. Take another bowl add in egg whites use wire whisk or hand mixer to whip. Once it start to foam add sugar. Keep whipping the mixture until they form stiff peaks. 6 . Combine both the mixture and mix them well. Fold the batter using spatula. 7. Once the cake batter is ready, gently pour into the cake tin. 8. Bake the cake at 180°C for 30 minutes. 9. Allow the cake to cool completely before you get it out of the cake tin. 10.
