INSTANT KUZHI PANIYARAM / KARA PANIYARAM

Kuzhi paniyaram is a popular South Indian tiffin or breakfast snack. They are crispy from outside, soft and fluffy from inside. This spiced dumplings are made from rice and urad dal batter. You can either use idli batter / dosa batter or make the batter from scratch. There are many varieties of paniyaram - spicy, sweet and savoury. Paniyaram is made in a special pan called paniyarakkal / paniyaram pan available in cast iron , non-stick and indalium types. You can serve kuzhi paniyaram with sambar or chutney of your choice. Here i have used dosa batter to make this instant kuzhi paniyaram.

 

 

 

 

  





INGREDIENT

 For tadka

Oil – 3 Tsp

Mustard seeds – 1 Tsp

Onion (chopped) – 1

Salt – To Taste

Green chillies (chopped) – 2

Curry leaves (chopped) – Few

Carrot (Grated) – 1/4 Cup

Coriander leaves (chopped) – Handful


 FOR PANIYARAM

Dosa batter – 4 Cup

Ghee – 2 Tsp

Oil / Ghee – Required quantity for paniyaram

      


 


 

 


 

 

 

TIPS TO GET THE perfect kuzhi paniyaram

1. Taste the batter and add more salt if needed. If you have already added salt to the batter, then add little salt to tadka.

2. Batter must be of medium consistency not very thin or thick.

3. The pan has to be hot and not smoking hot. If the pan is not hot enough the paniyaram will stick to the pan.

4. To flip the paniyaram run the skewer around each cavity and turn.

5. Use skewer to check if paniyaram is done.

6. Add oil / ghee before adding each batch to avoid mess in the pan.

 

 

                                                                                   

 

 

INSTRUCTIONS

1.   In a kadai add oil, mustard seeds wait until they crack.

2.   Add onion , required salt and saute until the onion turns translucent. 

3. Add green chillies, curry leaves saute for a minute. 

4. Then add carrot and mix well. Turn off the stove. 

5.  Take dosa batter in a bowl add coriander leaves to the batter. 

.  Add the prepared tadka and ghee to the dosa batter and mix well until they are combined.

7. Heat paniyaram pan with few drops of  oil / ghee. When the pan is hot enough fill each cavity to 3/4th with batter. They will puff and rise. 

8. Lower the heat. Cover and cook over medium flame.

9. Flip and cook on other side. Add some oil. Cook until both the sides turn golden brown and crisp.

10. Remove them to a plate. To make the next batch reduce the heat, add few drops of oil / ghee into the cavity and pour the batter. 

11. Instant kuzhi paniyaram is ready to serve with chutney of your choice.
